Coconut Lime Cupcakes

Prep & Cook time approx. 30-40 minutes

INGREDIENTS

  • 1 1/2 cup of flour

  • 1 cup shredded coconut / coconut pulp

  • 3/4 cups of sugar

  • 2 eggs (room temperature)

  • 1/2 cup butter softened, ghee or oil

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • zest of 4 small limes

  • juice of 2 small limes

INSTRUCTIONS

1) Preheat oven to 350º F.

2) Mix flour, baking powder and salt together in a small bowl and set aside

3) In a large bowl, cream together softened butter and sugar. Add eggs and vanilla until fully combined

4) Add lime juice and lime zest to wet mixture and stir well

5) Combine dry ingredients with wet ingredients, stir until well combined

6) Gently fold in coconut

7) Line cupcake pan with butter or oil, or use paper or silicone liners. Fill cups half full of batter.

8) Bake for 15-20 minutes, or until toothpick inserted into the centre comes out clean.

9) Allow cupcakes to cool for at least 10 minutes in the pan. Remove and allow to fully cool.
